Sweeteners give food and drink a sweet taste without the sugar. Two groups do the work. High-intensity sweeteners such as steviol glycosides, taken from the stevia leaf, and monk fruit extract are many times sweeter than sugar, so a pinch replaces a spoonful. Polyols, also called sugar alcohols, such as erythritol and xylitol, sit closer to sugar in sweetness and in volume. That is why they are sold in bags, while stevia arrives in small bottles and sachets.

Foods and drinks made with sugar replacers instead of sugar cause a lower blood glucose rise than the sugar-containing version. Sugar replacers also contribute to the maintenance of tooth mineralisation by reducing demineralisation. Both depend on actually replacing sugar, not adding extra sweetness on top. If cutting sugar is part of wider weight management goals, that distinction is the practical one.
Be realistic about two points. Larger amounts of polyols can cause bloating or a laxative effect, and tolerance differs per person, so start small and build up. Taste also needs adjusting, roughly one to two weeks, before a stevia-sweetened yoghurt stops tasting unusual. Some people decide they would rather train their palate down and pick products without added sweeteners instead. How much sweetener replaces a spoonful of sugar?
It depends entirely on the type. Erythritol is slightly less sweet than sugar, so most people use a little more than a spoon for a spoon. Xylitol is roughly equal in sweetness and volume. Pure stevia and monk fruit extracts are far sweeter, so a level micro-scoop or a couple of drops replaces a teaspoon. Always start below what you think you need. Too much high-intensity sweetener creates a bitter aftertaste you cannot cook out.
Can sweeteners upset your stomach?
Polyols can, in larger amounts. Erythritol, xylitol, sorbitol and maltitol are not fully absorbed, so part reaches the large intestine and may cause gas, bloating or looser stools. Erythritol is usually the gentlest of the group, sorbitol and maltitol the least gentle. Tolerance is personal, so build up over a week instead of baking a whole cake on day one. High-intensity sweeteners such as stevia are used in such small amounts that this rarely applies.
What can sweeteners genuinely do compared with sugar?

Yes, for the additive sweeteners. Regulators set an acceptable daily intake, or ADI: the amount that can be consumed every day over a lifetime without appreciable risk. For table-top use the ADI is hard to reach, because the amounts in a cup of coffee are small. Polyols such as erythritol and xylitol are limited in practice by digestive comfort rather than by a numeric table-top figure.

Which sweeteners hold up to heat and to yeast baking?
Erythritol, xylitol and steviol glycosides stay stable at normal oven temperatures, so they work in cakes, crumbles and custards. Aspartame loses sweetness with prolonged heat, which is why it belongs in cold drinks. Two practical limits remain. Sweeteners do not caramelise, so you lose browning and that toffee note. And yeast cannot ferment them, so bread dough needs a little real sugar or honey to rise. Expect a different texture, not a copy of the sugar version.
Why is xylitol a serious risk around dogs?
Xylitol triggers a strong insulin release in dogs, which can drop their blood sugar dangerously fast, and larger amounts are linked to liver damage. Humans do not react this way. Very small quantities can affect a small dog, so keep bags, baked goods and sugar-free gum out of reach and never share a home-baked treat. If your household includes a dog, erythritol or stevia is the easier choice. Contact a vet immediately if a dog eats xylitol.
