What is the difference between sunflower lecithin and soy lecithin?

Sunflower lecithin is derived from sunflower seeds, while soy lecithin is extracted from soybeans. The main difference is that sunflower lecithin is soy-free, making it a good choice for people with a soy allergy or for those who want to avoid soy.

What are phosphatides like phosphatidylcholine?

Phosphatides are fatty building blocks in lecithin. This product provides per serving, among others: phosphatidylcholine (2,500 mg), phosphatidylinositol (1,800 mg), and phosphatidylethanolamine (1,100 mg). These substances occur naturally in sunflower lecithin.

Why are there minerals such as calcium and phosphorus in lecithin powder?

These minerals are naturally present in the raw lecithin material that is extracted from sunflower seeds. They are not added, but are part of the natural composition.

Does lecithin powder completely dissolve in water?

No, lecithin is an emulsifier and mixes better with fats than with water. It does not dissolve completely but blends well into liquid or semi-solid preparations.
